An East Boston restaurant that closed two years ago was originally set to reopen as a food truck serving Mexican and Bolivian fare, but the owner has since changed his plans. Victor Duran, owner and chef of Que Padre Taqueria y Mas, will be joining the team at the soon-to-open Fuji at Ink Block.
Que Padre closed in September of 2014, but Duran continued to sell saltenas, a traditional Bolivian food that resembles an empanada, which customers could pick up in Cambridge and Everett, according to posts on the restaurant’s Facebook page. An update provided on that page announced a holding pattern for the food truck plans while Duran goes to work at Fuji — but he’ll still continue making saltenas on the side.
“Many of my Que Padre guests have been contacting me about when I was going to open the food truck,” the post read. “It is on hold for the moment as my new adventure with the Liang family begins. Make sure you come visit me at Fuji Ink Block… From Saltenas to Sushi!!!”
Fuji at Ink Block will open on August 1, as previously announced.
